Steak & Mushroom Florentine


Absolutely, positively loved this recipe!  Ted and I enjoyed this tremendously. The spinach, onion and steak in the creamy sauce was just the tops!   It was easy to make, easy cleanup and low calorie.  One Serving was 295 calories.   I served this with broccoli on the side and it was lovely. Spaghetti Squash & Pork Stir-Fry


Ted and I really were so surprised at the amazing taste of this recipe.  It was an unusual but delicious way to use the delicate strands of spaghetti squash—in an Asian-inspired pork stir-fry. Goat Cheese and Olive Stuffed Chicken Breasts


This Goat Cheese and Olive Stuffed Chicken Breast recipe is amazing!  Tastes great and is very healthy and low calorie.  Ted and I both kept saying things like, oh yum and or this tastes so good!  I love that we have eaten so many night in the past 10 months of chicken but because all of the recipes have been so good and different we hardly notice we are eating chicken so much.  That is amazing in itself!  The hard part of making this elegant dish is choosing the filling. Making a pocket in the chicken breast to hold the stuffing is easy, particularly if you use a good, sharp, thin-bladed knife. Browning the chicken in a skillet before baking gives it a beautiful golden color. Chicken Cordon Bleu (Easy)


When you make traditional cordon bleu, you layer prosciutto (or other ham) and cheese in between thin slices of chicken or veal, then bread and sauté the whole stack. This quick, easy version keeps the flavors the same, but skips the layering and breading steps.  This also keeps the calories lower.   Ted and I are real fans of this recipe and plan to make it again, soon!   Delicious!
