Spaghetti Squash with Chicken, Pears and Parmesan

Chicken Burgers with Basil Yogurt Sauce

What a lovely meal!  These juicy, open-faced burgers are smothered with a sweet and tangy basil yogurt sauce and topped with cheese, avocado and all the fixings – we promise, they’ll be your new favorite burgers!    I served them on half a 100 calorie bagel thin rather than the baguette because it was less gluten and calories.  However, I left the recipe as it was originally.   This is a real keeper and we will have this one again, for sure! Chicken Cutlets with White Wine Butter Sauce

This chicken cutlet with white wine butter sauce recipe was a rich sauce with almonds over lightly dredged chicken.  This meal made us feel like they’re dining in a fine French restaurant – but it only takes 25 minutes to make!  I had made a baked sweet potato and sautéed mushrooms as sides.  The meal was delicious and very low calorie.    Continue reading “Chicken Cutlets with White Wine Butter Sauce”

Sausage Ragù Over Polenta

This recipe was so easy but so elegant looking when I got it done and ready to eat.  Very easy to prepare and clean up.  Dinner was ready in 25 minutes.   Ted and I were so pleased at the taste since it basically was all carrots, onions and Italian sausage, but it was so amazing.  Great way to get a load of veggies in!   Totally a keeper!
