Balsamic Beef Roast and Veggies

This evening after rolling in the house from work and being stuck in traffic, I was so happy to walk in and smell the dinner that had been cooking all day.   The whole house smelled so good!  It was nice to have it ready to sit and enjoy!   We love roast and generally all beef meals but try to keep them limited.   We totally enjoyed this and I added button mushrooms and baby corn for an added treat!    Delicious! Rosemary Chicken Salad with Avocado and Bacon

This hearty Rosemary Chicken Salad with Avocado and Bacon makes a really big salad – perfect when you want a low-carb meal that will fill you up! I actually split this between three people, and felt completely satisfied.  Ted and I have gotten so fond of salads since we have been loving avocado so much!   It went together very quickly and tasted, FABULOUS!
