Brussels Sprouts and Sausage Parsnip Spiralized Pasta

Spiralized parsnips make a wonderful pasta replacement in this satisfying, spicy Autumn dish made with brussels sprouts and spicy chicken sausage.  Ted and I enjoy food that is on the warm side but this one was a little more than I prefer but I have to tell you I still enjoyed it so much!  What a nice fall dinner.

Impossibly Easy Octoberfest Pie

Spaghetti with Caramelized Red Onions and Whole Cherry Tomatoes, Pine Nuts and Pecorino Cheese

This meatless dish was so amazing!   I have not cooked with pine nut before but have to say they tasted so good sautéed with the red onion and tomatoes.    Ted and I both enjoyed it as it was like a true Italian meal without any heavy sauces.   Real easy to prepare and delicious too! Philly Cheesesteak Stuffed Portobello

It doesn’t get much better than a low-carb, Philly Cheesesteak stuffed in a Portobello Mushroom! Steak and mushrooms work so well together.  Ted and I really liked this and talked about the fact that we saved all the carbs we normally would have had if had the filling on rolls as we have in the past.  This saved calories and carbs.   Tasted Delicious!
