This is just one combination of that Ted and I love so much. We have avocado toast frequently, in many different versions. I am totally in love with the things you can do with an avocado and all the health benefits of it.
- 2 slices gluten-free or whole grain toast
- 1 avocado
- 1 wedge lemon
- sea salt
- 2 poached eggs
- 1 tomato, sliced
- salt and fresh ground pepper, to taste
- Mash avocado with juice from lemon wedge and sea salt to taste. Spread on top of toast. Top with poached egg and fresh tomato slices. Season with a little salt and fresh ground pepper.
