Avocado Breakfast Toast

 

This is just one combination of that Ted and I love so much. We have avocado toast frequently, in many different versions.  I am totally in love with the things you can do with an avocado and all the health benefits of it.

 

Serves 2

Ingredients:
  • 2 slices gluten-free or whole grain toast
  • 1 avocado
  • 1 wedge lemon
  • sea salt
  • 2 poached eggs
  • 1 tomato, sliced
  • salt and fresh ground pepper, to taste
Directions:
  1. Mash avocado with juice from lemon wedge and sea salt to taste. Spread on top of toast. Top with poached egg and fresh tomato slices. Season with a little salt and fresh ground pepper.
