These steak bites were so tender! I had cooked them in the butter spray so there are no extra calories. The were delicious! I am certain I will be making these again and soon. I served this with steamed broccoli florets and mashed potatoes. I think next time I will do some Brussel sprouts and sweet potatoes. Very versatile for sure.
1 1/2 pounds of skirt steak
1 tsp kosher salt
1/2 tsp ground pepper
4 Tlbs Butter, I used Parkay butter spray
6 ounces of button mushrooms
Cut the steak into bite size pieces about 1/2 inch in size. Sprinkle meat with the salt and pepper. Heat a heavy flat bottomed skillet over medium high heat and add 1Tlbs of the butter. When the butter has melted, swirl to coat the pan. Add the steak to the pan and cook until the pieces are cooked to your favorite doneness. Then when they are cooked remove them to a plate and saute the button mushrooms in the remaining butter until tender then add steak back to pan. Serve immediately and enjoy!
