Caprese Cups (gluten free)

 

This was the perfect appetizer for date night!  Low calorie, pretty and tasty too!

Ingredients:

2 boxes of globe tomatoes (seeded)

1 tub of mozzarella cheese balls, I used marinated.

Fresh basil leaves

Directions:

Cut the top of each tomato just enough to make the top easy to scoop the seeds out. I used a melon baller.  Then just tuck a basil leaf in each tomato cup with a mozzarella ball.   Enjoy!
