Caprese Salad Cups
Tonight we enjoyed cherry tomatoes and herbs from our green house that I made into fun Caprese Salad Cups. I think Caprese anything is good because it usually has cheese. We love cheese!
A dozen fresh cherry tomatoes, cut in half
4 oz. Mozzarella cut in cubes or sometimes I use the marinated mozzarella balls.
Herb of your choice. I used a mix of dried herbs that we have grown. Basil, oregano, and thyme for this one.
1/2 cup chopped onion, I like red onion but any will work.
Drizzle Balsamic Glaze and stir lightly…..Serve and Enjoy!
