Low Calorie Cheesburger Meatloaf

This meatloaf is extremely delicious! Such a quick fix, its perfect for any night of the week. Ted and I  really enjoyed this recipe! Cheesy Baked Pumpkin Pasta

Gluten Free pasta baked in the oven with a quick pumpkin sauce made with bacon, shallots, pecorino cheese and a touch of rosemary then topped with mozzarella cheese. This is such a great Fall dish, and Ted and I loved how it turned out!

Skirt Steak, Baby Bok Choy and Zucchini Stir-Fry

This quick stir-fry has some of my favorite foods; skirt steak, baby bok choy and zucchini plus carrots, scallions, garlic and ginger finished with a delicious sauce that has the perfect balance of savory, sweet, sour and spicy.   Ted and I both agreed it was tasty as anything we might have ordered when eating out.  Totally Delicious!
