Easy Chicken and Dumplings (weight watchers)

This was a perfect fall dinner even if the temperatures still say summer!  Ted went on and on about how delicious it was.  That tells me we will be having this again and soon!  There are no dumplings, they are actually sliced up pieces of tortilla.  You would never ever even guessed that, as it tasted like good old fashioned dumplings!   I love that it was Weight Watchers and the calories were amazingly low!    Absolutely love this recipe and will be making it again as the cooler weather arrives. Weight Watchers Slow Cooker Chili

This is actually what I made yesterday, it was a such a nice fall like day and it just seemed like a good day for chili.  We have been suffering with allergies so we stayed in and were couch potatoes.  We enjoyed this for lunch and dinner because it was so low in calories.  I have the rest put up in the freezer so we can part take of this again soon!  This really hit the spot! Cheesy Vegetarian Chili Mac

The new version is very similar to the old, but it has no beef (obvi), more beans, some diced tomatoes, and uses vegetable broth in place of the beef broth. This meal is so filling!  A serving is one and half cups and it is a lot.   Ted and I love meals that really fill you up but yet are healthy. This was a cheesy good, for sure! Skinny Broccoli Cheddar Soup

The weather today was so amazing. Brisk breeze, cool temps with warm sunshine, it was wonderful!  Although we could use some rain as we are in a bad drought.  The weather seemed perfect for a pot of soup. Ted and I love creamy soups, so I went for this skinny broccoli cheddar, its a favorite.  Only 269 calories per serving.    This warmed the tummy up for sure! Japanese Beef Stew

 

Tonight in light of this beautiful fall weekend, I chose the first of this weeks recipes from the “Biggest Loser Cookbook”.  it is Japanese Beef Stew, it is cooking while I am preparing the post and it smells so wonderful.   It has a real Asian flare to the smell and I bet it will taste fantastic.  I am serving gluten free honey cornbread with it, which also smelled wonderful while it was baking.  I definitely had Ted’s attention this evening.  Continue reading “Japanese Beef Stew”
