Easy Chicken and Dumplings (weight watchers)

This was a perfect fall dinner even if the temperatures still say summer!  Ted went on and on about how delicious it was.  That tells me we will be having this again and soon!  There are no dumplings, they are actually sliced up pieces of tortilla.  You would never ever even guessed that, as it tasted like good old fashioned dumplings!   I love that it was Weight Watchers and the calories were amazingly low!    Absolutely love this recipe and will be making it again as the cooler weather arrives. Cheesy Vegetarian Chili Mac

The new version is very similar to the old, but it has no beef (obvi), more beans, some diced tomatoes, and uses vegetable broth in place of the beef broth. This meal is so filling!  A serving is one and half cups and it is a lot.   Ted and I love meals that really fill you up but yet are healthy. This was a cheesy good, for sure! Beef & Bean Chile Verde

Beef & Bean Chile Verde usually a slow-cooked stew of pork, jalapeños and tomatillos, becomes an easy weeknight meal with quick-cooking ground beef and store-bought green salsa.  Ted and I really liked it as this was a new twist on chili for us.  It was warm for sure on this lovely fall day. If you are not a fan of heat in your food, you probably would want to skip the green salsa.   It was delicious with some cheddar cheese and sour cream on top!   Enjoyed the heck out of it!  Continue reading “Beef & Bean Chile Verde”
