Chicken Burgers with Basil Yogurt Sauce

What a lovely meal!  These juicy, open-faced burgers are smothered with a sweet and tangy basil yogurt sauce and topped with cheese, avocado and all the fixings – we promise, they’ll be your new favorite burgers!    I served them on half a 100 calorie bagel thin rather than the baguette because it was less gluten and calories.  However, I left the recipe as it was originally.   This is a real keeper and we will have this one again, for sure!

Serves 4

Ingredients
SAUCE
  • ¼ cup whole-milk plain yogurt
  • ¼ cup chopped fresh basil
  • 2 tsp Dijon mustard
  • 1 tsp fresh lemon juice
  • 1 tsp raw honey
  • ⅛ tsp each sea salt and ground 
black pepper
BURGERS
  • 1½ lb ground chicken or turkey
  • ¼ cup finely diced baby cucumber
  • ¼ cup finely diced red onion
  • 1 tbsp chopped fresh dill
  • 2 tbsp whole-milk plain yogurt
  • 2 tsp Dijon mustard
  • ⅛ tsp each sea salt and ground 
black pepper
  • 4 slices Havarti cheese (about 2 oz)
  • 4 slices whole-grain baguette (sliced on the diagonal about 1 inch thick)
  • 4 small leaves red leaf lettuce
  • 1 Roma tomato, sliced
  • ¼ cup diced avocado
Instructions
  1. Prepare sauce: In a small 
bowl, combine all sauce ingredients; 
set aside.
  2. Preheat a grill to medium-high and brush grates with oil.
  3. Prepare patties: In a large 
bowl, combine chicken, cucumber, onion, dill, 2 tbsp yogurt, 2 tsp mustard and ⅛ tsp each salt and pepper. Mix until just combined. Form 4 patties slightly larger than the baguette slices.
  4. Grill patties until cooked through, 8 to 9 minutes per side. During the last 2 minutes of cooking, top each burger with 1 slice cheese. Add bread to grill and cook, flipping once, until bread is toasted and cheese is melted.
  5. Assemble burgers: Place 1 leaf lettuce on each slice of baguette, 
top with tomato slices, patty, sauce 
and avocado.
