Ready in 30 minutes, this skillet chicken dish features good-for-you tomatoes and spinach. Serve over pasta or rice but tonight I did a baked potato on the side. Generally, Ted and I will spilt a potato to conserve on carbs. This recipe was so easy for after work too! Loved it! Continue reading “Herb Chicken Skillet with Spinach and Tomatoes”
This recipe was perfect for a hot summer evening after work. The salad was so fresh and packed with flavor and the turkey burger was so moist and tender due to the zucchini. Ted and I really enjoyed that it was a nice filling meal but very light and low calorie. Delicious! Continue reading “Naked Greek Feta-Zucchini Turkey Burgers”
This Mexican casserole has an amazing crust. This was very easy to make tasted delicious. Ted and I have tried a lot of recipes that usually have beef but this was with chicken and it was terrific. We topped it with sour cream, scallion and I wished that I had gotten black olives and jalapenos for the top too…..next time! Continue reading “Chicken Tamale Bake Casserole”

Ted and I love any recipe that feels like the comfort food we grew up on and this one nails that to a “T”! Continue reading “Lower Calorie Chicken Fried Steak & Gravy”
Thin sliced chicken cutlets sauteed in a white wine sauce with leeks and sun-dried tomatoes. Dinner in less than 20 minutes! That is perfect for weeknight cooking to me! I love the mild onion flavor of leeks, I use them in soups, pasta dishes and chicken dishes. Paired with the robust flavor of the sweet sun-dried tomatoes, this dish is sure to please the palate! I used Red Mill Gluten Free all purpose flour for a gluten free dish. Ted and I really enjoyed this elegant dish!
