Healthier Beef and Broccoli Noodles

 

Dinner tonight was so quick and yet so amazingly good!   Talk about restaurant quality this was it!  Ted even liked it enough to have some seconds which usually is a no for us!   The sauce was easy to make and tasted fantastic!  If you are a fan of beef and broccoli this is a must try!

Serves: 4
Ingredients
  • 1/2 pound Rice Noodles
  • 2/3 cup Low Sodium Soy Sauce
  • 4 cloves garlic minced
  • 3 tbsp Lime Juice
  • 1 tbsp Siracha
  • 2 tsp honey
  • 3 tbsp Sesame Oil
  • 1 tbsp cornstarch
  • 1 pound Sirloin Steak thinly sliced against the grain
  • 3 cups Broccoli Florets
  • 1 cup Mushrooms sliced
  • 1 Bell Pepper sliced
Instructions
  1. In a small bowl, whisk together soy sauce, garlic, lime juice, Sriracha, honey, and 2 tablespoons sesame oil. Marinate Steak strips in this sauce for at least 15-30 minutes or overnight. set aside.
  2. In a large pot of salted boiling water, cook noodles according to package directions until al dente. Drain. Rinse, and set aside.
  3. Take steak strips out of the marinade. Set left over marinade aside and stir in the cornstarch to the marinade.
  4. In a large skillet over medium-high heat, heat remaining tablespoon sesame oil. Add steak and cook 3 to 5 minutes.
  5. Add broccoli, peppers and mushrooms and 2 tablespoons water and stir, cooking until tender, about 6 minutes.
  6. Reduce heat to low and add cooked noodles and reserved sauce to skillet. Toss until fully coated and warmed through.
