Healthy Lobster Scampi


This was a delicious brunch meal, we had it get our start our holiday weekend off in Style!  We love pasta, so this was a treat for sure.  There are so many good gluten free pasta’s available now! ENJOY!

Yields 4 to 5 servings

Takes about 35 minutes to prepare

  •  2 ounces (1/2 stick) butter (I used Parkay Butter Spray its zero calorie)
  •  1/2  tsp minced garlic
  •  1 tablespoon olive oil
  • 1 tablespoon Dijon Mustard
  • 2 tablespoon Worcestershire sauce
  •  1/2 cup dry white wine
  • 1/2 cup reduced fat, low sodium chicken broth
  • 1/2 pound cooked lobster meat (I used 4 small fresh lobsters)
  • 1/2 a package of gluten free linguini pasta


Heat Broiler to High, I broil fresh lobsters for about 11 minutes to make sure they are cooked well but not too much.  while these are cooking you can prepare the sauce and pasta.

Melt butter and oils in a large pan over low heat. After it has melted, add the garlic and brown slightly over medium heat. Whisk in the mustard, chicken broth, Worcestershire sauce, and wine. Simmer gently for 5 minutes. Add lobster, and cook until meat is heated through.

Serve over pasta.
