Low Calorie Pudding Pie with Strawberries

This pie was festive,delicious and refreshing since it was so hot out today!  Ingredients:

1 box of sugar free, fat free vanilla pudding.  (I used Jell-O brand)

1 tub of lite cool whip

2 cups diced up fresh strawberries

1/2 cup fresh blueberries

1  9 inch gluten free pie crust. (I used Wholly brand) regular crust can be substituted.

 

Directions:

Bake the pie crust as per directions and allow to cool completely before filling.

Mix the pudding mix with 1 cup milk  (I used 1%) consistency will be a tad on the thicker side.   I then folded in 1 and 1/2 cups of lite cool whip.

Pour the mixture in the cooled crust.

Add cool whip around the edge of the crust.  I did about an inch around the entire pie

Add the strawberries inside and on the cool whip and the blue berries in the middle.

Refrigerate for approximately 30 minutes and Enjoy!

 

Make 6 servings at approximately 140 calories.
