These Mediterranean Style Herb & Olive Sausages, really take care if the craving for Greek food. I absolutely love that Kroger’s now has these Mediterranean sausages in the meat deli. They are only one dollar each. I have been working on some recipes to use them in because, they are only 140 calories each, so having two is not too bad and just the right amount to feel satisfied. They are really a time saver and I am looking forward to trying more recipes using them.
4 – 4 ounce Mediterranean sausages
2 tsps. Olive oil
1/2 cup chopped Kalamata olives, pitted
1/2 cup diced tomato
1/2 cup reduced fat, 30 calorie feta crumbles.
Heat the skillet and add the 2 tsps. of olive oil. Once heated add the four sausages and cook on each side until done.
Once they are cooked thoroughly, remove them to a plate or serving dish.
Top two sausages with 1/4 cup each of the olives, tomato and feta cheese.
Serve while still warm.
