Tonight we dined on Pork Chops with French Onion and Mushroom Gravy, just marvelous for a cool fall evening! This recipe is so quick and easy, great for after work. I made some healthy mac and cheese and white beans with scallions for the sides. Just seemed to hit the spot. I had one happy husband for sure!
Serves 4 20 minutes to prepare
4 boneless pork chops with fat trimmed
1 Can of Progresso French onion soup, low sodium (50 calories per serving)
1 small can of sliced mushrooms, rinsed
2 Tlbs cornstarch
Cook the pork chops until well done or to your likeness. Remove from the skillet.
Add the soup and sliced mushrooms to the skillet, heat until bubbly.
Add the cornstarch a little at a time while soup is bubbly and stir constantly until well blended and the soup begins to thicken.
Add pork chops back to the pan to heat a little and serve.
1 pork chop and a 1/2 cup of the gravy is 190 calories.
