Spice Cake with Almond Frosting


Today was just another lovely day that is starting to feel like fall!  I wanted to bake something healthy for this week and to make the whole house smell good too! This particular recipe, which combines a Betty Crocker Super Moist spice cake mix and 12 ounces of diet ginger ale , no-calorie soda, contains 160 calories and 3 grams of fat per slice. The original recipe on the box contains 228 calories and 10 grams of fat. Not a bad reduction on calories but no loss on the taste.  The cake mixes with any diet coke are always so moist, every time!   Ted and I enjoyed a slice with a fresh coffee, very nice indeed!

Cake Ingredients:

I Spice Cake mix

12 ounces of Diet Gingerale

Mix these two things together well, Bake at 350 for 30 minutes.  Allow to cool completely before adding the frosting.


Frosting Ingredients:

I tub of Cool whip lite

1 box sugar free fat free vanilla pudding mix

I cup unsweetened almond milk

1/2 tsp almond flavoring.

Mix the pudding, almond flavoring and milk together, this should be some what thick and then fold the tub of cool whip in and stir until well blended.   Spread entire mixture over the cake and serve.

I topped this one with a small amount of pecan chips which looks great!
