Spinach & Brie topped Artichoke Cups


I made these little adorable and tasty filled phyllo cups for date night.  They would be excellent for any party or tailgating!   They are flavorful and gorgeous when done.  They were quick to assemble and elegant enough for a any party even a wedding!    I love the taste of the combination of ingredients and that they are just little bites of YUM!

Ready in about 15 minutes.


1  Can of artichoke hearts drained and minced

2/3 cups of cooked chopped spinach, (I used frozen)

1 tsp lemon pepper

1/4 tsp salt

15 thin slices of brie cheese

15 frozen phyllo cups


Preheat Broiler

Prepare artichoke hearts and spinach, combine with lemon pepper and salt in a small bowl. fill each phyllo cup with a dab of this mixture, top with a piece of brie cheese.

Broil 1 to 2 minutes until cheese melts.
