Sweet and Sour Glazed Chicken Breasts


This Sweet and Sour Glazed Chicken recipe is a sweet -citrus chicken and much like a barbeque style chicken.  The sticky glaze was finger licking good!   Ted and I both agreed it is a keeper and would be great for lunches, brunches or dinners.   I will be making this again as it was a keeper! I think it would also be good to take to pot lucks or parties since it is a rather quick and easy way to make a chicken dish.

Serves 4


4 skinless, boneless chicken breasts about 4 ounces each

2 Tlbs honey

2 Tlbs Lite or low sodium soy sauce

1 tsp. grated lemon peel

1 Tlbs. Lemon juice

salt and pepper to taste


Using a sharp knife, score the chicken breast with a criss-cross pattern on both sides. Be sure not to cut through the meat.

Combine the honey, soy sauce, lemon peel, and juice in a small bowl and season with pepper.

Arrange the chicken on the broiler rack and brush with half the honey mixture. Cook under a preheated broiler for 10 minutes, then turn over and brush with the remaining mixture and cook for another 8 to 10 minutes.  The juices should run clear when the thickest part of the chicken is Skewered.
