Creamy Pasta with Brussels Sprouts & Mushrooms

 

Tonight, Ted and I dined on a meatless Monday recipe called Creamy Pasta with Brussels Sprouts & Mushrooms.   Sliced Brussels sprouts and mushrooms cook quickly and cling to the pasta in our fall version of pasta primavera.  One serving was only 384 calories and when it comes to pasta, we love it and that is not too bad a price to pay for it!   This meal was scrumptious! Potato, Asparagus & Mushroom Hash

 

Made with asparagus, roasted red pepper and mushrooms, this hash has a fresh and light, springtime taste.  Ted and I added smoked turkey sausage but it would have been good with eggs served on top too!   The recipe was quick to make and basically all in one skillet. Creamy Butternut Squash Pasta

Chicken Fried Steak and Gravy

 

Can you really make a chicken-fried steak that isn’t loaded with saturated fat and salt? Absolutely. We skipped the deep frying, but with rich country gravy as consolation, you won’t miss it. This crispy Chicken Fried Steak and Gravy was a truly delicious Sunday kind of dinner.   It was actually better than I would have made in the past.  The coating was crispy and made this meal feel like a cheat meal and it was delicious!  Ted and I really loved this recipe!  One steak was a little over 300 calories, not to bad! Cube Steak with Mushroom-Sherry Sauce

 

Ted and I really enjoyed this recipe but with the sauce being made of sherry, well for us, that makes it a winner already!  Cube steak is a tougher cut of meat pounded to make it tender. We like it because it cooks quickly and is inexpensive—perfect for a weeknight dinner.
