Tuna Stuffed Endive

This appetizer was elegant and has so many possibilities too!  I love that they were so light and very tasty.  These would be great for a party.   They were fairly easy to assemble and I piped the cheese on them but you could just spoon it on.  

Makes about 24

Ingredients:

4  ounces soft spread herb cheese

4  ounces reduces calorie cream cheese

1  tsp lemon juice

2  heads of Belgian endive

1  3.5 ounce can of tuna in water

Directions:

In blender or food processor bowl, place cheeses and lemon juice. Cover and process until well blended. Trim 1/2 inch from bottom stems of endive; Separate heads into leaves.  Sprinkle 1 to 2 teaspoons of tuna into each leaf; spoon or pipe cheese filling on top of tuna.  Garnish and serve. I used chives but you could use fresh herbs, pimento or sprigs of watercress.
